Grocery stores frequently have a section devoted to Hispanic food. Not just tortillas and frijoles, but a wall filled with hanging bags of herbs and spices. Things like dried tamarindos compete for space with ten or fifteen different sorts of chilies. Then there are the little things that look like a small thread cone, the sort that are used on commercial sewing machines. The label reads: Piloncillo, Panela, or Panocha. What it is, is sugar.

When sugar was first being processed around 600 C.E., it was made into three forms: molasses, moscovado cones, and sugar loaves. Molasses is of course the liquid state of processed sugar cane. By cooking the molasses another step, it begins to crystallize. This is moscovado sugar. It is dark and molasses flavored. Sugar loaves are compressed cones of refined white sugar.

Panela is moscovado sugar. It is usually sold two to a package, and keeps very well on the shelf, so long as it is packed in airtight containers.

Coyotas are not a feral breed of canine. Coyotas are a dessert empanada. They take a little bit of work, but they are well worth the time.

Before you begin, you will need to crush the panela. The easiest way is to put it in a doubled plastic bag and hit it with a knife handle or the flat of a hammer (being careful with fingers and counter tops of course)

Coyotas

You will need:

  • 2 ½ cup crushed panela
  • 3 cups all purpose flour
  • ½ teaspoon salt
  • ½ cup shortening
  • ¾ cup cold water

How to do it:

Mix together the flour and salt. Cut in the shortening (you can use vegetable shortening, but the traditional recipe calls for leaf lard. Calm down. It is the same calorie content as shortening, and is actually lower in saturated fats than vegetable shortening. It also gives a flakier, more tender crust.) Once the fat is cut into pea sized bits, make a well in the center and add about ½ cup of water and begin to pull the flour in from the sides. Add more water as needed. Knead the dough with your hands as you mix.

Once you have a ball of dough, turn it out onto a lightly floured work surface. Divide it into 20 even pieces. Roll out each ball into a 5" circle.

Put a tablespoon of crushed panela onto half of the circle. Wet your finger with water and dampen the edge of the dough. Fold over in half and seal the dough with a fork.

Bake the Coyotas on a lightly greased baking sheet at 375° for about 15 minutes, until they begin to turn golden brown.

Serve while still warm.

The panela will turn into a caramelly, gooey center while they are warm. Once the coyotas cool, the filling begins to solidify again. Not bad, but not as good as warm.

1 14 1/2 oz. evaporated milk

3 tbsp. cocoa

1/4 c. oleo

Liquid Sweetner to equal 1/2 c. sugar

1/4 tsp. salt

1 tsp. vanilla

2 1/2 c. graham cracker crumbs

1/4 c. nuts

Combine milk and cocoa in saucepan. Beat well. Add oleo, sweetner, salt. Bring to boil. Remove from heat. Stir in remaining ingredients except 1/4 cup graham crackers. Cool about 15 minutes. Divide mixture into 32 balls. Roll in remaining cracker crumbs and chill.

If using an old straw hat make or buy some flowers to stick on the hat to create a spring garden. Fill with Easter chicks and eggs. Candy eggs are better as they are less likely to melt and stick better. Finish with pretty ribbon in pastel shades.

Let your child make their own hat by crunching up paper and sticking it to the hat until it is completely filled. A rainbow effect can be made using different bands of colored tissue paper, or completely cover it in paper flowers.

Boys are perhaps more reluctant to wear an Easter hat, so using an old baseball cap removes the problem of the occasion when making Easter hats for boys. They can be decorated as animal or other themes very easily.

To make a nest using a baseball cap, cover the cap in brown paper or tissue. Make an extra nest shape at the top with scrunched up paper and fill with chicks and candy eggs as with the plate hat.

This can be made simply by your child.

Give your child some card and let them decorate it with whatever materials you have such as coloring pencils, markers, ribbons, glitter, paper flowers etc. Once they have finished, fold the card into a cone shape and secure the edges with sticky tape. Make two holes in the end and thread some ribbon or elastic through to tie under the chin.

Rabbit hair band bonnet

This is particularly good for small children who perhaps do not like wearing a hat. It is easy to make and uses very little materials.

Make some large cut out rabbit ears and cover them in either gray felt or material. Cover the inside with pink material. If you don't have any material, simply them in with markers. Cut strips of pink or gray paper or material and wind them round your hair band until completely covered. Bend the end of the rabbits ear to make a flap and stick securely under the hair band.

300 g Candied Cherries; red and green; chopped

2 tbsp Icing Sugar; for decoration

Mix chopped pecans, apricots bits, dates and cherries together. Drizzle condensed milk over fruit mixture and keep stirring. Add in vanilla essence. Now add in dessicated coconut. Fold in sifted flour until no more flour lumps.

Spoon cake mixture into greased tube pan. Bake in preheated oven at 150°C for 20 minutes before upping heat to 170°C and bake for another 30 minutes.

Allow cake to cool a little before removing from pan. Dust cake lightly with icing sugar. Keep cake in air-tight container.

Not Sure What To Serve For Easter Dinner?

Yes, some people will think about new suits and new dresses and as a time for chocolate bunnies, marshmallow chicks, and colored eggs. Certainly a number of children will. But for me, Easter is about being with family and friends and enjoying a great meal with them.

I recently saw a statistic that says, despite the fact that the better restaurants seem packed with people on Easter, only 35 per cent of Americans go out for their Easter meal. That means 65 per cent of us either stay at home and cook or we are the guests of relatives who are doing so.

I will be cooking and preparing Easter dinner at my house this year for the first time in 24 years! I finally have a fully trained, very competent staff at my restaurant. They will handle everything at the business, allowing me to cook for my family, relatives and friends. I consider this a great honor, not a burden. This is one of the things I do best, and I enjoy it!

One of the most interesting things about Easter is that it is somewhat of a "melting pot" holiday, with traditions from many cultures and religions. But there is no doubt about it, food plays a big part of celebrations in every culture.

This Crab Artichoke Dip Appetizer is the all-time best selling appetizer at my restaurant, despite the fact that crab is expensive. The combination of ingredients is what drives the price but it is so good my restaurant guests buy it frequently.
